Specialty Classes

In addition to our Basic Curriculum, we offer several Specialty Classes.    In these classes, we will go into more depth about the subject material.  These classes are taught on the premise that students have a basic knowledge of tasting wine.    However, first-time tasters are always welcome and will not be left behind!

Specialty Subjects

The Sparklers

This course covers the  essentials of appreciating sparkling wine.    We will discuss how to smell and taste sparkling wines, and expand your understanding of its aromas and flavors.     We will also cover the basics of sparkling wine production, the major varietals used, and how to open a bottle without injuring your neighbor.   A must for anyone who appreciates this most elegant of wines!

 

Japan Wines

The Japanese wine industry is growing.   Names like Yamanashi, Nagano, and Hokkaido are starting to appear more and more on labels at Tokyo wine bars and shops.     In this course, we will learn about the major Japanese appellations and varietals, and discuss the art of pairing wines with Japanese cuisine.

 

Winemaking:  An Inside Look

Learn about the basics of making wine from a professional!   With Oenologue Sera’s years of experience at your disposal, you will go into the winery cellars (virtually) to see the technical process that goes into creating the most elite wines in the world.   During the tasting, we will discuss what a winemaker notes, what she is looking for, and how that might differ from what other wine professionals and connoisseurs may look for.

 

Great Appellations:  France

Voulez-vous un verre du vin?   In this class we will go into an overview of the major appellations of France, the major varietals grown in each, and how to decipher confusing French wine labels.     A little history, a little culture, a little about cuisine may be thrown in.    Single and Multi-session classes available.

Multi-session option. Each session will be devoted to one of France’s major appellations:  Alsace, Champagne, Bordeaux, Bourgogne, Loire Valley, Rhone, Languedoc.    Choice of appellations and number of sessions is at the client’s discretion.

 

Great Appellations:  North America

This is an overview of the major appellations of the United States and Canada.   We will discuss the different regions, the major varietals grown in each, and what distinguishes North American wines from other world wines.    Single and Multi-session classes available.

Multi-session option.  Each session will be devoted to one of the major appellations:  California, Oregon, Washington, New York, Canada, California sub-appellations (Napa, Sonoma, Central Coast.)   Choice of appellations and number of sessions is at the client’s discretion.
